Grilled Florida Shrimp with Mango and Sweet Chili Sauce

Ingredients

20 large Florida shrimp, peeled and deveined

4 Florida mangoes, peeled and cut into ½-inch cubes

1 cup sweet chili sauce

½ lime, juiced

1 tablespoon fresh ginger, grated

1 tablespoon fresh mint, chopped fine

¼ cup scallions, sliced fine

20 small bamboo skewers

Preparation

Soak the bamboo skewers in water for at least 1 hour (this reduces the chance of the skewers burning). Combine the sweet chili sauce, lime juice, ginger and mint in a small bowl. Slice the scallions and set aside. On a clean surface, place a mango cube in between the tail and top of a shrimp. Insert the bamboo skewer through the shrimp and mango. Repeat the skewering process until all shrimp are skewered and store in the refrigerator until ready to grill. Preheat a charcoal grill (or indoor grill pan) and cook the shrimp and mango skewers. When the shrimp is close to being cooked through, glaze with the sweet chili sauce. Sprinkle with the sliced scallions and serve. 

Panko Crusted Florida Avocado Fingers

Ingredients

2 Florida avocados, peeled, seeded and sliced

½ lime, juiced

1 cup whole wheat flour

1 egg, lightly beaten

2 cups panko

Nonstick cooking spray

Olive oil for drizzling

Sea salt and fresh ground pepper, to taste

Preparation

Preheat oven to 400 degrees. Lightly spray a cookie sheet with the nonstick cooking spray. In a mixing bowl, add the avocado slices and lime juice, season lightly with salt and pepper. Carefully toss avocados to coat. Remove seasoned avocado slices from bowl and coat them completely with the flour. Dip each flour coated avocado slice into the beaten egg to coat. Coat each egg dipped avocado slice with panko. Place each evenly coated avocado slice on the cookie sheet. Lightly drizzle olive oil onto the coated avocado slices. Place avocado slices into the preheated oven and bake for about 15 minutes or until golden brown. Serve warm with your favorite dipping sauce.

Florida Passion Fruit and Orange Margarita

Ingredients

2 ounces freshly squeezed Florida orange juice

4 ounces passion fruit juice

6 ounces tequila

2 ounces orange liqueur

1 ounce freshly squeezed lime juice

½ teaspoon vanilla extract

2 tablespoons sea salt

Preparation

Prepare the glass by running a lime wedge around the rim. Invert glass, and twist rim in salt. Fill cocktail shaker with ice. Pour passion fruit juice, tequila, orange liqueur, orange and lime juices, and vanilla extract in cocktail shaker. Shake the mix vigorously, 50 times or more. Pour into glass; serve chilled.

Florida Watermelon Pops

Ingredients

4-6 cups Florida watermelon (seedless), cubed

4 tablespoons Florida Key lime juice

¼ cup Florida sugar

1 lime, zest only

Preparation

Add all ingredients to blender, puree until smooth. Pour into popsicle mold (use wooden popsicles sticks or molds that have sticks provided) and freeze for at least 3 hours to set. Unmold and serve immediately.
