Florida Sweet Corn, Tomato and Avocado Salsa

Ingredients
4 ears Florida sweet corn
2 large Florida tomatoes, diced
1 large Florida avocado, peeled, pit removed and diced
½ cup Florida bell pepper, chopped fine
½ cup red onion, chopped fine
¼ cup fresh cilantro, hand-torn
1 lime, juiced
1 teaspoon powdered cumin
Dash of hot sauce (your favorite)
Sea salt and fresh ground pepper, to taste
Preparation
Remove corn kernels from cob. In a medium mixing bowl, combine all ingredients and mix thoroughly. Taste and adjust seasoning with salt, pepper and hot sauce.
Sundried Florida Tomatoes

Ingredients
3-4 pounds Florida tomatoes, sliced ¼-inch thick
3-4 sprigs fresh thyme, leaves removed
1 cup olive oil
Sea salt, to taste
Preparation
Preheat oven to 225 degrees. Arrange tomato slices on a sheet pan (cooling wire rack is optional) and sprinkle with salt and fresh thyme. Roast in oven for 2 ½ to 4 hours, depending on size and number of tomatoes. You will know the tomatoes are completely dry when there is little to no moisture left. Consume right away or place into airtight container with olive oil for up to 1 week in the refrigerator.
Fresh tip: use in pasta dishes, sauces, salads or sandwiches!
Florida Vegetable Quiche

Ingredients
2 medium Florida squash, thinly sliced
2 medium Florida zucchini, thinly sliced
1 cup Parmesan cheese, grated
1 cup sharp cheddar cheese, grated
3 eggs, beaten
2 tablespoons unsalted butter, cubed
2 tablespoon fresh thyme, chopped
1 tablespoon all-purpose seasoning (your favorite)
Sea salt and fresh ground pepper, to taste
Preparation
Preheat oven to 375 degrees. Spray a standard pie plate with non-stick cooking spray. Start by layering squash on bottom, followed by a sprinkle of Parmesan and cheddar, followed by a drizzle of beaten eggs. Season with thyme and a dash of all-purpose seasoning, salt and pepper. Continue layering until three-quarters full. Finish with a layer of cheese and cubes of butter. Place in oven and bake for 20 to 30 minutes, depending on thickness of squash (should be slightly soft in middle).
Fresh tip: This dish can be served warm, room temperature or chilled.
Florida Tomato and Sweet Pepper Soup

Ingredients
6 large Florida tomatoes, cores removed and quartered
3 large Florida red bell peppers, seeds and stem removed, chopped rough
1 large onion, peeled and chopped rough
2 tablespoons fresh garlic, chopped
1 tablespoon olive oil
4 cups low-sodium vegetable or chicken broth
1 tablespoon all-purpose seasoning (such as Everglades)
½ teaspoon smoked paprika
Sea salt and fresh ground pepper, to taste
Plain yogurt or sour cream for garnish
Preparation
Place a large soup pot over medium-high heat and add olive oil. Carefully add the peppers and onions and cook for 10 minutes while stirring occasionally. The peppers and onions should have some good caramelization and color on them from cooking. Add the garlic, tomatoes, seasoning blend and smoked paprika. Stir ingredients and continue cooking for another 3 to 4 minutes. Add the chicken or vegetable broth and stir. Bring ingredients to a quick boil and reduce heat to a simmer. Cook ingredients for another 10 minutes. Remove the soup pot from the heat. Using an immersion blender, carefully blend the soup until creamy and smooth. Once the soup has reached the desired consistency, taste it and adjust seasoning with salt and pepper. Serve soup warm with a garnish of plain yogurt or sour cream.
Fresh Tip: If you don’t have an immersion blender, you can use a countertop blender working in small batches at a time. Always be careful blending hot liquids.
